Grilled steak fajitas are a family favorite around here. This is another cheap and easy meal you can prepare at home. You can add or remove ingredients as you wish, but this is a great base recipe! Here’s what you’ll need:
Flank or skirt steak
Red and/or green bell pepper
Red onion
Fajita seasoning
We mixed up our own seasoning that I found on the web here. We left the corn starch out though. You can use the store bought packet if you prefer.
You’ll need to set up your grill for indirect grilling first. Then place your steak on the side opposite the coals. I put my vegetables on the grill too. I place everything as shown here.
It doesn’t take long to cook. Shown here is a skirt steak. I prefer flank steak, but both work well. It takes about 10-15 minutes per side. I usually check it with a meat thermometer for 140-145 so we achieve medium well. Both of these cuts will get tough if you cook them too long, so pay attention and don’t over cook them. I usually turn or mix up the vegetables when I flip the steak to make sure they cook evenly. Once everything is cooked, just bring it inside to slice it up.
Here’s the skirt steak sliced into strips that are about 1/4 to 1/2 inch thick. You can make them thinner or thicker depending on your preference.
We like to top everything with cheese, guacamole, and sour cream for me. If you want to toast your tortillas on the grill, you can do that as well.
I hope these grilled steak fajitas become a favorite in your family. You can use other cuts of steak if you’d like, but this works great for us. You could also substitute chicken or steak using the same method, but you would make sure they were cooked all the way through.
