
Here’s how I cook a calzone on the grill. My lovely wife wanted me to grill a pizza, so we compromised on calzones. It was really simple to adapt to cooking on the grill and added a “brick oven” style crust texture and flavor.
Make the Dough
First, I made some pizza dough. You can get the boxed kind, or make your own. I’m really not picky on pizza dough. Here’s a pizza dough recipe that I like.
Start Your Grill
While the dough was rising, I set the grill up for indirect grilling.
Make a Little Garlic Butter
I also started some garlic butter. Basically, just add 4 tablespoons of butter and one teaspoon of garlic powder in a saucepan on warm or low.

Roll It Out
Finally, we get to the fun part. Now that the dough has risen, I kneaded it once again and then rolled it out on some aluminum foil.

Fill it Up!
I added some sauce, cheese, sausage, andouille sausage, and more cheese. You can add whatever toppings you like. That’s the fun of doing it yourself!

Fold and Roll
Then I folded the dough over and started rolling the edges. I start at the center and work my way out so the excess is on the corners, not bunched up in the middle.

Make it Pretty(ish)

Garlic Butter for Your Calzone
Once the edges were rolled, I twisted knots in the ends and brushed garlic butter over the edges.

Put the Calzone on the Grill
Next, place the calzone on the grill for approximately 25 minutes. I put some aluminum foil under it to help me transfer to and from the grill. It’s not critical to use foil, but you’ll have to be careful when moving your calzone. Leave the calzone on the grill until the crust is golden brown. You can leave it on longer depending on how you like it.

Time to Eat!
This makes enough for two this size. My mouth is watering just thinking about this calzone!

This was really easy to make and didn’t really cost much either. I hope you enjoy this as much as we did. In case you’re wondering about the writing on the calzone itself, I just filled a zip-lock bag with some sauce, clipped the corner and squeezed to write on the calzone.
