Grilled zucchini is one of our favorites. I like to put it on the grill while I’m cooking something else to make everything all together. Less dishes, less trouble, and it tastes great!
First you’ll need the following:
Zucchini
Garlic Powder
Onion Powder
Pepper
Olive Oil
2 Pens and a knife (yep, random, but you’ll see why in a second)
I always hate having uneven slices, so I decided to figure out something I could use to make perfectly uniform, thick slices. I ended up using two ink pens to lay the knife on to use to slice the zucchini. My final configuration is shown here:
I figured out that you can just clip the pens onto the knife, hold the zucchini flat on the cutting board, and then slice away from yourself. This was the safest way I could accomplish this. Please be careful! If you don’t feel like using pens or knives or feel unsafe at any time, just stop. No zucchini is worth a trip to the emergency room. Find a qualified adult to come help you.
I had a really long zucchini, so I cut it in half first giving me sections that were about 4-6 inches long. Now lets slice them up!
Now we have nice, thick zucchini slices.
Drizzle them with a little olive oil, not much, a glug or two will do. Then sprinkle with garlic powder, onion powder, and pepper to taste. At this point, you want to get your grill set up for indirect heat as I usually do. I was actually cooking grilled chicken at the same time, so I prepped my zucchini while my chicken was cooking. If you’re only doing grilled zucchini, then you could actually spread your coals out evenly across the whole grill.
First, toss all the zucchini on the hot side to get some grill marks and crisp them up just a tad. You’ll want to do approximately 1-2 minutes each side depending on how hot your grill is at this point.
All flipped over. Notice the ones farther away from center don’t have as much heat. This is something to be aware of so you can rotate them to the hot spot as needed.
Now we move everything to the grilled zucchini safe zone away from the heat. You can close the lid on them now and let everything cook another 10-15 minutes depending on how soft you want your zucchini. That’s it! Really simple, but really good!
